double chocolate chip “on a whim” cookies

Throw these together and you’re guaranteed compliments from your friends, family, coworkers and whoever else is lucky enough to sample your cookies 😉

Ingredients

  • 1/2 cup margarine, room temperature
  • 3/4 cup granulated sugar
  • 1/4 cup agave nectar
  • 2 heaping tbsp brown sugar
  • 1-2 eggs
  • 1 cup whole wheat flour
  • 1/2 cup wheat bran
  • 1/2 cup oats
  • 1/3 cup dutch cocoa powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • pinch of baking powder
  • 1 tsp pure vanilla extract
  • 1 cup mini chocolate chips

Directions

  1. Preheat oven to 350 degrees fahrenheit.
  2. Mix margarine, granulated sugar, agave and brown sugar until all creamed together. Add in eggs one at a time, you could get away with only using 1 egg if you don’t have 2 to spare!
  3. In a separate bowl, combine flour, wheat bran, oats, cocoa powder, baking soda, baking powder, salt, cinnamon and vanilla extract. Mix together thoroughly.
  4. Slowly add flour mixture into the creamed butter and sugar. Mixing well as you go.
  5. Fold in chocolate chips and whatever other ingredients you’d like! Nuts, seeds, more chocolate…
  6. Chill batter for 20-30 minutes then spoon dollops onto aluminum foil-lined baking sheets.
  7. Bake for 12 minutes and remove from oven to let cool for 2 minutes before transferring cookies to cooling rack.
